This diabetes recipe can be prepared in advance and
freeze in convenient portions.
Golden Corn Chowder (Serves
4)
Ingredients
- 275 g drained, canned corn
kernels
- 600 g vegetable stock
- 1 red onion, diced
- 1 green pepper, seeded and
diced
- 600 ml skim milk
- 2 tbsp corn flour
- 180 g low-fat Cheddar or Edam
cheese, shredded
- 1 tbsp fresh snipped chives
- ground black pepper
To Garnish
Preparation
- Place the corn, stock, onion and pepper in a pan.
Blend 4 tbsp of skim milk with the corn flour to form a paste.
- Bring the pan contents to a boil, reduce the heat, and
simmer for 20 minutes. Add the milk and corn flour paste
and bring to the boil, stirring until thickened.
- Stir in the cheese and chives and season. Heat until
the cheese has melted, garnish, and serve.
