Healthy diabetes recipes for the whole family to enjoy!


  • This diabetes recipe can be prepared in advance and freeze in convenient portions.

Golden Corn Chowder (Serves 4)

Ingredients

  • 275 g drained, canned corn kernels
  • 600 g vegetable stock
  • 1 red onion, diced
  • 1 green pepper, seeded and diced
  • 600 ml skim milk
  • 2 tbsp corn flour
  • 180 g low-fat Cheddar or Edam cheese, shredded
  • 1 tbsp fresh snipped chives
  • ground black pepper

To Garnish

  • snipped chives

Preparation

  1. Place the corn, stock, onion and pepper in a pan.  Blend 4 tbsp of skim milk with the corn flour to form a paste.
     
  2. Bring the pan contents to a boil, reduce the heat, and simmer for 20 minutes.  Add the milk and corn flour paste and bring to the boil, stirring until thickened.
     
  3. Stir in the cheese and chives and season.  Heat until the cheese has melted, garnish, and serve.
