This diabetes recipe makes a wonderful starter to
start your meal.
Creamy Mushrooms (Serves 4)
Ingredients
- 2 tbsp olive oil
- 1 large garlic clove
- 2 spring onions, chopped
- freshly ground black pepper
- 750 g button mushrooms
- 180 g low-fat cream cheese
For Garnish
- a little parsley, chopped
Preparation
- Heat the oil in a large frying pan. Add the garlic,
onions and seasoning, and cook for 2 minutes. Then add all
the mushrooms and toss them over high heat for a couple of
minutes, until they are hot. Do not cook the mushrooms
until their juices run as they will be too watery.
- Make a clearing in the middle of the mushrooms, add the
low-fat cream cheese and stir it in for a few seconds, until it
begins to soften. Gradually mix all the mushrooms with the
cheese until they are evenly coated.
- Divide among individual plates or dishes and top with a
little parsley, if liked. Serve at once with warmed whole
wheat bread or toast.
- Alternatively, transfer the mushrooms to a bowl, cool, then
cover and chill them briefly before serving.
