  • This diabetes recipe makes a wonderful starter to start your meal.

Creamy Mushrooms (Serves 4)

Ingredients

  •  2 tbsp olive oil
  • 1 large garlic clove
  • 2 spring onions, chopped
  • freshly ground black pepper
  • 750 g button mushrooms
  • 180 g low-fat cream cheese

For Garnish

  • a little parsley, chopped

Preparation

  1. Heat the oil in a large frying pan.  Add the garlic, onions and seasoning, and cook for 2 minutes.  Then add all the mushrooms and toss them over high heat for a couple of minutes, until they are hot.  Do not cook the mushrooms until their juices run as they will be too watery.
  2. Make a clearing in the middle of the mushrooms, add the low-fat cream cheese and stir it in for a few seconds, until it begins to soften.  Gradually mix all the mushrooms with the cheese until they are evenly coated.
  3. Divide among individual plates or dishes and top with a little parsley, if liked.  Serve at once with warmed whole wheat bread or toast.
  4. Alternatively, transfer the mushrooms to a bowl, cool, then cover and chill them briefly before serving.
