This diabetes recipe takes its inspiration from
Morocco. It can be cooked in a slow cooker and served with couscous.
Turkey Tagine (Serves 4)
Ingredients
- 450 g diced turkey meat
- 2 tbsp flour
- freshly ground black pepper
- 2 tbsp olive oil
- 1 medium onion, peeled and
sliced into wedges
- 3-4 garlic cloves, peeled and
sliced
- 1 tsp cumin
- 1 tsp ground coriander
- 1 cinnamon stick, lightly
bashed
- large pinch of saffron
- 2 large carrots, peeled and
sliced
- 300 ml turkey or chicken stock
- 75 g chopped dried apricots
- 3 tomatoes, chopped
- 400 g can chickpeas, drained
To Garnish
- 1 tbsp chopped fresh coriander
To Serve
- steamed couscous and bread or other green salad
Preparation
- Preheat the slow cooker on high. Trim and discard any
sinew or fat from the meat, then toss in the flour seasoned with
slat and pepper. Heat 1 tbsp of the oil in a pan and
gently sauté the onion and garlic for 3 minutes. With a
slotted spoon, transfer to the cooking pot.
- Add the remaining oil to the pan and sear the turkey meat on
all sides. Sprinkle in the ground spices with the cinnamon
stick and saffron, add the carrots and cook, stirring
frequently, for 3 minutes. Add the stock, stirring
throughout. Bring to the boil, add the apricots and
tomatoes, then pour over the onions in the cooking pot and mix
lightly.
- Cover the cooking pot with the lid and cook for 2 hours.
Add the drained chick peas and continue to cook for another 1-3
hours. Remove the cinnamon stick, stir in the chopped
coriander and serve with the freshly prepared couscous and bread
or a green salad.
