  • This simple diabetes recipe is a delicious variation on traditional herrings in oats.

Mackerel with Oats (Serves 4)

Ingredients

  •  8 tbsp medium oats
  • freshly ground black pepper
  • 4 small mackerel, gutted with heads off and boned
  • a little lemon juice

Preparation

  1. Put the oats on a plate and season well.  Hold one mackerel by its tail and sprinkle the flesh side with a little lemon juice.  Press the fish on the oats, flesh side down and use a spoon to dust more oats over the top of the fish.  Press the oats on well, then lay the mackerel on the grill rack.  Repeat with the remaining mackerel.
     
  2. Cook the mackerel under a moderately hot grill, allowing about 10 minutes on each side, until the oats are browned and crisp and the fish is cooked through.
     
  3. Serve piping hot, with thinly sliced whole meal bread.
