This simple diabetes recipe is a delicious variation
on traditional herrings in oats.
Mackerel with Oats (Serves 4)
Ingredients
- 8 tbsp medium oats
- freshly ground black pepper
- 4 small mackerel, gutted with
heads off and boned
- a little lemon juice
Preparation
- Put the oats on a plate and season well. Hold one
mackerel by its tail and sprinkle the flesh side with a little
lemon juice. Press the fish on the oats, flesh side down
and use a spoon to dust more oats over the top of the fish.
Press the oats on well, then lay the mackerel on the grill rack.
Repeat with the remaining mackerel.
- Cook the mackerel under a moderately hot grill, allowing
about 10 minutes on each side, until the oats are browned and
crisp and the fish is cooked through.
- Serve piping hot, with thinly sliced whole meal bread.
