Grilled Tuna with Thyme (Serves 4)

Ingredients

  • juice of 1 large orange
  • 3 plump garlic cloves, very thinly sliced
  • 2 tbsp fresh thyme leaves
  • 1 tbsp finely grated orange rind
  • ground black pepper
  • 6 tuna steaks, about 2.5 cm thick

Preparation

  1. Put the orange juice, thyme, orange rind and seasoning into a shallow non-metallic dish, large enough to hold the tuna in a single layer.  Mix well, then add the tuna steaks, turning them until evenly coated.  Push some of the garlic slices between the flakes of tuna.
     
  2. Cover and leave to marinate in the refrigerator for 30 minutes - 1 hour, turning the tuna once or twice during this time.
     
  3. Lift the fish out of its marinade and cook over medium-high heat for about 4-5 minutes on each side or until very nearly cooked through.  (Tuna will become dry when overcooked, so stop cooking when it is still slightly translucent at the center.)
