This is a wonderful diabetes recipe that brings out
the best of the grilled tuna..
Grilled Tuna with Thyme (Serves 4)
Ingredients
- juice of 1 large orange
- 3 plump garlic cloves, very thinly sliced
- 2 tbsp fresh thyme leaves
- 1 tbsp finely grated orange rind
- ground black pepper
- 6 tuna steaks, about 2.5 cm thick
Preparation
- Put the orange juice, thyme, orange rind and seasoning into
a shallow non-metallic dish, large enough to hold the tuna in a
single layer. Mix well, then add the tuna steaks, turning
them until evenly coated. Push some of the garlic slices
between the flakes of tuna.
- Cover and leave to marinate in the refrigerator for 30
minutes - 1 hour, turning the tuna once or twice during this
time.
- Lift the fish out of its marinade and cook over medium-high
heat for about 4-5 minutes on each side or until very nearly
cooked through. (Tuna will become dry when overcooked, so
stop cooking when it is still slightly translucent at the
center.)
