Healthy diabetes recipes for the whole family to enjoy!


  • This diabetes recipe is cooked in a slow cooker.  It is best to skin the fish first.

Fish Provençal (Serves 4)

Ingredients

  •  4 cod or other form white fish fillets, about 550 g
  • 1 onion, peeled and sliced
  • 1 yellow pepper, deseeded and sliced
  • 425 g can artichoke hearts, drained and cut in half
  • 4 firm tomatoes, sliced
  • 2 oz pitted black olives
  • 1 bay leaf
  • freshly ground black pepper
  • 120 ml medium dry white wine

To Garnish

  • snipped fresh olives

To Serve

  • warm crusty bread or new potatoes and salad

Preparation

  1. Preheat the slow cooker on high.  Skin the fish if necessary, cut into bite-sized pieces and place in the cooking pot.  Add the remaining ingredients except for the wine and chives.  Bring the wine to just below boiling point, pour over the fish, then cover with the lid.
     
  2. Reduce the temperature to low and cook for 3-4 hours.  Serve garnished with chives and with either warm crusty bread or new potatoes and salad.
