Diabetes Recipes for Light Meals

Healthy diabetes recipes for the whole family to enjoy!


  • This is a colorful vegetable diabetes recipe that can be eaten as a snack, starter or even an accompaniment with a meal.

Tricolor Vegetable Gratin (Serves 4)

Ingredients

  • 2 leeks, cut into strips lengthways
  • 2 carrots, cut into sticks
  • 75 g snow peas
  • 150 g baby corn, halved
  • 2 garlic cloves, minced
  • 1 tbsp clear honey
  • 1/ 2 tsp ground ginger
  • 1/4 tsp freshly grated nutmeg
  • 170 ml apple juice
  • 170 ml vegetable broth
  • 60 g fresh white bread crumbs
  • 2 tbsp chopped fresh coriander
  • 30 g shredded low-fat cheese

Preparation

  1. Place the vegetables in a large pan of boiling water and cook for 10 minutes.
     
  2. Drain well and place in a shallow ovenproof dish.  Mix together the garlic, honey, ginger, nutmeg, apple juice and broth, and pour over the vegetables.
     
  3. Mix together the bread crumbs and coriander.  Sprinkle over the vegetables to cover.  Top with the cheese.
     
  4. Bake in the oven at 200oC/gas mark 6 for 45 minutes or until golden brown.  Serve immediately.
