This is a colorful vegetable diabetes recipe that can be eaten as a
snack, starter or even an accompaniment with a meal.
Tricolor Vegetable Gratin (Serves 4)
Ingredients
- 2 leeks, cut into strips

- 2 carrots, cut into sticks
- 75 g snow peas
- 150 g baby corn, halved
- 2 garlic cloves, minced
- 1 tbsp clear honey
- 1/ 2 tsp ground ginger
- 1/4 tsp freshly grated nutmeg
- 170 ml apple juice
- 170 ml vegetable broth
- 60 g fresh white bread crumbs
- 2 tbsp chopped fresh coriander
- 30 g shredded low-fat cheese
Preparation
- Place the vegetables in a large pan of boiling water and
cook for 10 minutes.
- Drain well and place in a shallow ovenproof dish. Mix
together the garlic, honey, ginger, nutmeg, apple juice and
broth, and pour over the vegetables.
- Mix together the bread crumbs and coriander. Sprinkle
over the vegetables to cover. Top with the cheese.
- Bake in the oven at 200oC/gas mark 6 for 45 minutes or until
golden brown. Serve immediately.
