This is a quick store-cupboard diabetes recipe for a last-minute
preparation.
Pasta with Pimento (Serves 4)
Ingredients
- 350 g dried spaghetti
- dash of olive oil, plus 2 tbsp
- 2 garlic cloves, crushed
- 400 g can red pimento, thinly
sliced
- salt substitute and freshly
ground black pepper
- freshly shredded Parmesan
cheese, to serve (optional)
Preparation
- Bring a large saucepan of water to the boil and add the
spaghetti with a dash of olive oil. Cook for about 10
minutes, stirring occasionally, until tender.
- Drain and return to the saucepan. Set aside, covered,
to keep warm.
- Heat the remaining olive oil in a frying pan and add the
garlic and sliced pimento. Stir-fry for 3-5 minutes, then
tip into the warm spaghetti. Stir to combine.
- Serve with a little freshly shredded Parmesan cheese, if
liked.
