Diabetes Recipes for Light Meals

  • This is a quick store-cupboard diabetes recipe for a last-minute preparation.

Pasta with Pimento (Serves 4)

Ingredients

  • 350 g dried spaghetti
  • dash of olive oil, plus 2 tbsp
  • 2 garlic cloves, crushed
  • 400 g can red pimento, thinly sliced
  • salt substitute and freshly ground black pepper
  • freshly shredded Parmesan cheese, to serve (optional)

Preparation

  1. Bring a large saucepan of water to the boil and add the spaghetti with a dash of olive oil.  Cook for about 10 minutes, stirring occasionally, until tender.
     
  2. Drain and return to the saucepan.  Set aside, covered, to keep warm.
     
  3. Heat the remaining olive oil in a frying pan and add the garlic and sliced pimento.  Stir-fry for 3-5 minutes, then tip into the warm spaghetti.  Stir to combine.
     
  4. Serve with a little freshly shredded Parmesan cheese, if liked.
