You need to choose firm, well-shaped and blemish-free new potatoes
for this diabetes recipe. This is to ensure they cook evenly.
New Potatoes with Garlic
(Serves 4)
Ingredients
- 450 g new potatoes, lightly
scrubbed
- 2 tbsp olive oil
- 2 garlic cloves, peeled and
crushed
- 1 tbsp fresh basil, chopped
For the Sauce
- 1 small onion, quartered and thinly sliced
- 1 tsp paprika
- pinch of cayenne pepper
- 1 tsp fennel seed
- 300 ml passata
- 300 ml vegetable stock
- 2 tbsp fresh basil, chopped
- fresh basil, to garnish
Preparation
- Line a steamer tier with foil, making an edge to form a
dish. Put the potatoes, oil, garlic and basil in the foil.
- Place the sauce ingredients in the base of the steamer and
bring to the boil. Cook the potatoes, covered, over the
sauce for 45 minutes until the potatoes are tender.
Garnish with basil, and serve with the sauce.
