Diabetes Recipes for Light Meals

Healthy diabetes recipes for the whole family to enjoy!


  • This diabetes recipe is based on the famous Waldorf salad, though it has been given a new refreshing twist to the original recipe.

Fresh Pasta with Waldorf Salad (Serves 4)

Ingredients

  • 2 red apples, rinsed, cored and thinly sliced
  • 2 ripe pears, peeled, cored and sliced
  • juice of 1 lemon
  • 4 celery stalks, trimmed and sliced
  • 65 g pecan halves
  • 225 g fresh pasta
  • 1 small head romaine lettuce
  • freshly shaved Romano cheese

For the Dressing

  • 3 tbsp reduced calorie mayonnaise
  • 2 tbsp yogurt
  • 1-2 tsp medium hot curry powder

Preparation

  1. Place the apple s and pears in a bowl, pour over the lemon juice, and toss lightly.
     
  2. Add the sliced celery and pecan halves, and mix lightly.
     
  3. Cook the pasta in plenty of boiling water for 1-2 minutes or until firm to the bite.  Drain and add to the celery.
     
  4. Blend together the reduced calorie mayonnaise, yogurt and curry powder to taste, reserve.  Rinse the lettuce and use to line a salad bowl.  Pile the prepared salad into the center and drizzle over the dressing.  Sprinkle with the freshly shaved Romano cheese.
