Diabetes Recipes for Light Meals

  • This diabetes recipe will make a wonderful light meal even on its own.

Fragrant Wild Rice Casserole (Serves 4)

Ingredients

  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 1 red pepper, chopped
  • 150 g chopped mushroom
  • 100 g pecan nuts, roughly chopped
  • 150 g wild rice
  • 700 ml well-flavored chicken or vegetable stock
  • 4-5 freshly chopped parsley
  • freshly ground black pepper
  • freshly chopped parsley to garnish

Preparation

  1. Preheat the oven to 160oC/gas mark 3.  Heat the oil in a large flameproof casserole, then add the onion and pepper and cook slowly for about 5 minutes.
     
  2. Stir in the mushrooms and pecans and continue cooking until the juices run from the mushrooms, then add the wild rice.  Stir well, then pour in the stock.
     
  3. Bring the casserole to the boil then add the parsley.  Cover and bake in the oven for 1 1/4 - 1 1/2 hours, until the rice has absorbed all the stock.  Season to taste, then serve with a green salad.
