This diabetes recipe will make a wonderful light meal even on its
own.
Fragrant Wild Rice
Casserole (Serves 4)
Ingredients
- 3 tbsp olive oil
- 1 onion, finely chopped
- 1 red pepper, chopped
- 150 g chopped mushroom
- 100 g pecan nuts, roughly
chopped
- 150 g wild rice
- 700 ml well-flavored chicken or
vegetable stock
- 4-5 freshly chopped parsley
- freshly ground black pepper
- freshly chopped parsley to
garnish
Preparation
- Preheat the oven to 160oC/gas mark 3. Heat the oil in
a large flameproof casserole, then add the onion and pepper and
cook slowly for about 5 minutes.
- Stir in the mushrooms and pecans and continue cooking until
the juices run from the mushrooms, then add the wild rice.
Stir well, then pour in the stock.
- Bring the casserole to the boil then add the parsley.
Cover and bake in the oven for 1 1/4 - 1 1/2 hours, until the
rice has absorbed all the stock. Season to taste, then
serve with a green salad.
