This diabetes recipe is quick to prepare.
Crab Balls with Tangy Lime
Sauce (Serves 4)
Ingredients
- 225 g can white crab meat,
drained and squeezed dry
- 75 g fresh whole wheat
breadcrumbs
- 4 spring onions, trimmed and
chopped very finely
- freshly ground black pepper
- freshly grated nutmeg
- 1 large egg, beaten
- 75 ml olive oil for frying
Sauce
- grated rind and juice of 2
limes
- 1 tbsp demerara sugar
- 1 red chili, seeded and chopped
very finely
Preparation
- Mix all the ingredients for the sauce together and set aside
until needed.
- Mix the crab meat with the breadcrumbs and spring onions
then season with pepper and nutmeg. Add the egg and blend
the mixture together. Flour your hands and shape the
mixture into 20 walnut-sized pieces.
- Heat the oil in a frying pan and add the crab balls.
Fry them for about 4-5 minutes until evenly browned all over,
turning occasionally. Drain on paper towels, then serve
immediately with the lime sauce for dipping.
