This diabetes recipe is low in calories yet
deliciously sweet.
Watermelon with Mango Salsa (Serves 6-12)
Ingredients
- 12 x 4 cm thick watermelon
wedges
- 400 g chopped mango
- 100 g fresh strawberries,
hulled and chopped
- 1 tbsp finely chopped jalapeno
chili
- 2 tbsp finely chopped fresh
mint
- 2 tbsp honey
Preparation
- Combine all the ingredients except the watermelon in a
medium bowl. Refrigerate the salsa and watermelon until
chilled.
- To serve, spoon the mango salsa over the watermelon wedges.
