  • This diabetes recipe is low in calories yet deliciously sweet.

Watermelon with Mango Salsa (Serves 6-12)

Ingredients

  • 12 x 4 cm thick watermelon wedges
  • 400 g chopped mango
  • 100 g fresh strawberries, hulled and chopped
  • 1 tbsp finely chopped jalapeno chili
  • 2 tbsp finely chopped fresh mint
  • 2 tbsp honey

Preparation

  1. Combine all the ingredients except the watermelon in a medium bowl.  Refrigerate the salsa and watermelon until chilled.
     
  2. To serve, spoon the mango salsa over the watermelon wedges.
