This diabetes recipe offers a variety of textures and
flavors from the combined fruits.
Strawberries with Melon and Orange (Serves 4)
Ingredients
- 350-450 g halved strawberries
- 1 small Galia melon, balled
- 2 oranges
- 125 g orange juice (optional)
Preparation
- Place the halved strawberries in a bowl with the melon
balls. Peel the oranges and break into segments, then cut
them in half or chop them roughly, depending on size.
- Add the oranges to the other fruits with any juices, adding
extra orange juice if necessary. The fruits will usually
create their own juice, especially if the melon is ripe.
- Leave to stand for 30 minutes. Serve the fruit salad
at room temperature, decorated with the fresh mint leaves.
