Healthy diabetes recipes for the whole family to enjoy!


  • This diabetes recipe is very high fiber and tasty snack to accompany a cup of tea or coffee.

Oaty Cookies (Makes 12)

Ingredients

  • 60 g whole wheat flour
  • 1/2 tsp baking soda
  • 187 g oatmeal
  • grated peel and juice of 1 orange
  • 50 g golden raisins
  • 4 tbsp oil
  • 3 tbsp unsweetened apple juice

Preparation

  1. Preheat the oven at 180oC/gas mark 4, and grease a baking sheet.
     
  2. Mix the flour, baking soda, oats, orange peel and golden raisins.  Mix in the oil and orange juice with enough apple juice to make a firm dough.
     
  3. Turn the dough out onto a floured surface and knead it lightly, then divide it in half and cut each half into 6 equal portions.  Flatten each portion into a 3-6 cm circle.
     
  4. Place the cookies on the baking sheet as they are shaped, and bake for 15-20 minutes, until browned.  Transfer the cookies to a wire rack to cool.
