This diabetes recipe is very high fiber and tasty
snack to accompany a cup of tea or coffee.
Oaty Cookies (Makes 12)
Ingredients
- 60 g whole wheat flour
- 1/2 tsp baking soda
- 187 g oatmeal
- grated peel and juice of 1
orange
- 50 g golden raisins
- 4 tbsp oil
- 3 tbsp unsweetened apple juice
Preparation
- Preheat the oven at 180oC/gas mark 4, and grease a baking
sheet.
- Mix the flour, baking soda, oats, orange peel and golden
raisins. Mix in the oil and orange juice with enough apple
juice to make a firm dough.
- Turn the dough out onto a floured surface and knead it
lightly, then divide it in half and cut each half into 6 equal
portions. Flatten each portion into a 3-6 cm circle.
- Place the cookies on the baking sheet as they are shaped,
and bake for 15-20 minutes, until browned. Transfer the
cookies to a wire rack to cool.
