Healthy diabetes recipes for the whole family to enjoy!


  • All the fruits used must be as fresh as possible in diabetes recipe.

Fruity Salad (Serves 4)

Ingredients

  • 2 medium-sized juicy oranges
  • 2 limes
  • 30 g raspberries
  • 30 g golden raspberries
  • 30 g strawberries
  • 30 g blueberries
  • 30 g blackberries
  • 1 large papaya
  • 2 kiwi fruit, peeled and sliced
  • 20 g fresh coconut meat, shredded or 25 g desiccated coconut

Preparation

  1. With a sharp paring knife, remove all skin from the oranges.  Holding the oranges over a medium bowl to catch the juices, cut along the membranes of the oranges so that the segments fall into the bowl as well. Repeat the process for the limes.
     
  2. Add raspberries, strawberries, blueberries and blackberries.  Cover and refrigerate for 2 hours.
     
  3. Peel the papaya, cut in half and remove seeds.  Cut each half into 1 cm slices and arrange on 4 plates with the sliced kiwi fruit.
     
  4. Spoon the berry and orange mixture, with the juices, over the papaya.  Sprinkle with coconut.
