This diabetes recipe makes a delightful accompaniment
to soft fruits of all kinds. It can be served with fresh dates or
figs, or drizzled with honey and sprinkled with nuts.
Dairy Moulds (Serves 6)
Ingredients
- 450 g low-fat cottage cheese
- 150 ml plain low-fat yogurt
- 150 ml low-fat crème fraîche
- 3 tbsp warm water
- 1 sachet powdered gelatin,
about 11g
Preparation
- Sieve the cottage cheese into a bowl. Beat in the
yogurt and low-fat crème fraîche.
- Pour the water into a small bowl, sprinkle on the gelatin,
stir well and stand the bowl in a pan of warm water. Leave
for about 5 minutes for the gelatin to dissolve. Pour the
gelatin mixture into the cheese and beat well.
- Spoon the cheese into 6 individual moulds.
Heart-shaped ones are traditional, or you can improvise by using
ramekin dishes or yogurt pots covered with muslin and inverted.
Stand the moulds on a wire rack over a plate and leave them to
drain in the refrigerator overnight.
- Turn out the moulds and serve the cheese well chilled.
