This diabetes recipe is suitable to be served at the
end of a meal.
Banana Custard (Serves 3-4)
Ingredients
- 2 bananas, sliced
- shredded rind and juice of 1
lemon
- 750 ml low-fat crème fraîche or
low fat yogurt
- 75 g pecans, chopped roughly
- 1 tbsp honey
- 75 g bran
- skim milk
Preparation
- Toss banana slices in lemon juice, then place in a bowl.
Carefully mix in low-fat crème fraîche or the low-fat yogurt,
nuts, honey and bran.
- If the mixture is very thick, add 1 or 2 tbsp of skim milk
to thin it down.
- Decorate with lemon rind just before serving.
