The oatmeal in this diabetes recipe is an excellent source of soluble
fiber!
Simple Homemade Muesli
(Makes about 255g)
Ingredients
- 167g oatmeal
- 125g bran
- 62.5g wheat or millet flakes
- 112.5g chopped dried apple
rings
- 150g chopped ready-to-eat dried
apricots
- 150g chopped walnuts
Preparation
- Mix all the ingredients in a
large bowl, then store the muesli in an airtight container in a
cool, dry place.
- Serve with milk (skim milk or
low fat) or natural yogurt. Fresh fruit, such as banana,
grapes or peach, may be served with the muesli. For a
special breakfast, combine a selection of chopped fresh fruits
with the muesli.
