Simple Homemade Muesli (Makes about 255g)Diabetes Recipe

Ingredients

  • 167g oatmeal
  • 125g bran
  • 62.5g wheat or millet flakes
  • 112.5g chopped dried apple rings
  • 150g chopped ready-to-eat dried apricots
  • 150g chopped walnuts

Preparation

  1. Mix all the ingredients in a large bowl, then store the muesli in an airtight container in a cool, dry place.
     
  2. Serve with milk (skim milk or low fat) or natural yogurt.  Fresh fruit, such as banana, grapes or peach, may be served with the muesli.  For a special breakfast, combine a selection of chopped fresh fruits with the muesli.
