This diabetes recipe is suitable for those who are caught up in the
morning rush.
Oaty Banana Breakfast
(Serves 4)
Ingredients
- 100 g rolled porridge oats
- 200 ml skim milk
- 4 tbsp clear honey
- 2 large dessert apples, peeled,
cored and grated
- 2 medium bananas, thinly sliced
- juice of 1 lemon
- juice of 1 orange
- 2 tsp grated orange rind
- 300 ml plain low-fat yogurt
For Garnish
- 4 dark muscovado sugar
- 2 tbsp fresh or frozen berries, or orange segments
Preparation
- Soak the porridge oats in skimmed milk overnight.
- In the morning stir in all the remaining ingredients and
divide the mixture among 4 individual serving glasses.
- Decorate each glass with whatever fruit is available.
Oatcakes make very good accompaniment.
