Herby Omelet (Serves 4)Diabetes Recipe

Ingredients

  • 4 eggs, lightly beaten
  • 56 g cottage cheese
  • 1 tbsp parsley, finely chopped
  • 2 tsp fresh thyme, finely chopped
  • 14 g unsalted butter
  • 2 tomatoes, chopped
  • 150 g chopped ready-to-eat dried apricots
  • 150 g chopped walnuts

To Serve

  • whole meal toast

Preparation

  1. Place the eggs, cheese, and herbs in a bowl and whisk together.
     
  2. Place the unsalted butter in a non-stick omelet pan and place over a medium heat to melt.
     
  3. Pour in the egg mix and draw the edge of the omelet to the center of the pan as it become firm.  Tip thye pan gently to allow the uncooked egg mixture to flow to the sides of the pan.
     
  4. When it is lightly set, sprinkle with the tomato and cook gently for 1 minute.
     
  5. Fold in half and transfer to a warmed serving plate.
     
  6. Cut into 4 portions and serve immediately with whole meal toast, if wished.
