  • Grapefruit is thought to slow down the rate of sugar metabolism.  This diabetes recipe transforms this versatile citrus fruit into three lovely cocktails to help you start your day or just to simply begin a meal.

Fruity Medley (Serves 4)Grapefruit diabetes recipe

Grapefruit Cocktail

  • 2 large juicy grapefruits
  1. Peel the grapefruits and remove all the pith.  Hold the fruit over a bowl and use a sharp serrated knife to cut in towards the middle of the fruit, removing the fleshy segments and leaving behind the membranes that separate them.

Melon Cocktail

  • 5 cm piece fresh ginger root, peeled and chopped
  • a little water
  • 1 tbsp artificial sweetener
  • 1 tbsp rose water
  • 1/2 honeydew melon
  • large wedge watermelon
  1. Place the ginger in a saucepan with water to cover.  Bring to the boil, cover and simmer for 30 minutes, making sure the water does not evaporate.  At the end of cooking, reduce the liquid used to boil the ginger to 2 tbsp or slightly less.  Leave to cool, then stir in the artificial sweetener and rose water.
     
  2. Discard the seeds and peel form both types of melon, then cut them into small, neat cubes.  Mix the melon with the grapefruit and strain the ginger juice over.  Chill for at least 30 minutes before serving.

Grape Cocktail

  • 125g seedless green grapes
  • 2 kiwi fruits, peeled, halved and sliced
  • 4 mint sprigs
  1. Leave small grapes whole and halve larger ones, then mix them with the grapefruit.  Add the kiwi fruit and mint, then mix lightly.
