This healthy diabetes recipe is filled with chunks of delicious apple
and complemented by cinnamon-spiced yogurt sauce.
Chunky Apple Drop Patties (Serves 4)
Ingredients
- 80 ml skim milk
- 1 green dessert apple, cored
and chopped
- 1 tbsp raisins
- vegetable oil
For the Patties
- 60 g whole meal flour
- 1 tsp baking powder
- 1 tsp caster sugar
- 1 medium egg, beaten
For the Yogurt Sauce
- 170 g low-fat plain yogurt
- 1/2 tsp ground cinnamon
- 1 tsp honey
Preparation
- Sift the flour and baking powder for the biscuits into a
mixing bowl and stir in the sugar. Make a well in the
center and beat in the egg and milk to make a smooth batter.
Stir in the apple and raisins, mixing well.
- Brush a heavy pan with a little oil and warm over medium
heat. Divide the batter into 8 equal portions and drop 4
portions into the pan, spacing them well apart.
- Cook for 2-3 minutes until the top of each drop pattie
begins to bubble. Turn the patties over and cook for 1
minute. Transfer to a warmed plate while cooking the
remaining 4 portions.
- Mix the yogurt sauce ingredients together in a bowl.
Serve with the hot drop patties.
