Breakfast Crunch (Serves
4-6)
Ingredients
- 30 g sunflower seeds
- 30 g pine kernels
- 30g sesame seeds
- 2 oranges
- 75 g dried figs, chopped
- 2 large bananas
- 600 ml Greek yogurt
Preparation
- Using a dry frying pan, roast
the sunflower seeds and pine kernels for 3 minutes over medium
heat, then add the sesame seeds and roast for a further 3
minutes, stirring to give even browning. Remove the pan
from the heat.
- Coarsely grate the peel from 1
orange and add to the pan with the dried figs. Stir until
well combined and cook for 2 minutes. Leave to cool.
- Remove the peel and pith from
the oranges and cut them into pieces. Slice the bananas
and mix with the oranges and yogurt, divide among 4 dishes and
top each with the fig and seeds mixture. Serve at once.
